Eggs Tortilla

This is hands down the easiest breakfast recipe you're going to make! Our breakfast tortilla is inspired by @whatiateforbreakfast with her iconic tortilla base - it's packed full of veggies and cheesy goodness; perfect for lunchboxes or meal prepping as it's so easy and quick to make in just 20 mins in our Vortex Air Fryer!

Ingredients

  • 200g cherry tomatoes
  • Handful spinach 
  • 4-5 eggs
  • 1 large whole wheat wrap
  • Splash milk
  • Salt and pepper to taste 
  • Small Handful mozzarella cheese

Instructions

  1. Place the whole wheat wrap into a cake tin. Add the cherry tomatoes, spinach and cheese on top.
  2. Whisk 4-5 eggs (enough to cover your fillings) with a splash of milk, season to taste then pour this over the fillings. Dont overfill with egg past the wrap “base”
  3. Place the tortilla into the instant vortex. Select bake, then set the temp and time to 165C and 20-25 minutes, Cook until the eggs are set, and a knife inserted into the middle comes out clean without any uncooked egg.  Serve hot or cold
