This is hands down the easiest breakfast recipe you're going to make! Our breakfast tortilla is inspired by @whatiateforbreakfast with her iconic tortilla base - it's packed full of veggies and cheesy goodness; perfect for lunchboxes or meal prepping as it's so easy and quick to make in just 20 mins in our Vortex Air Fryer!
Ingredients
- 200g cherry tomatoes
- Handful spinach
- 4-5 eggs
- 1 large whole wheat wrap
- Splash milk
- Salt and pepper to taste
- Small Handful mozzarella cheese
Instructions
- Place the whole wheat wrap into a cake tin. Add the cherry tomatoes, spinach and cheese on top.
- Whisk 4-5 eggs (enough to cover your fillings) with a splash of milk, season to taste then pour this over the fillings. Dont overfill with egg past the wrap “base”
- Place the tortilla into the instant vortex. Select bake, then set the temp and time to 165C and 20-25 minutes, Cook until the eggs are set, and a knife inserted into the middle comes out clean without any uncooked egg. Serve hot or cold
