Leftover Risotto Arancini: A Delicious Way to Reimagine Leftovers
Turn your leftover risotto into a crispy, golden bite of Italian perfection with homemade arancini. These delightful rice balls, traditionally filled with a savoury mix of cheeses, meats, or vegetables, are a brilliant way to repurpose risotto into a new, exciting dish. Whether you have leftover mushroom risotto, seafood, or a simple cheese risotto, transforming them into arancini makes for a delicious appetiser, snack, or side dish.
To make arancini, simply take chilled risotto, shape it into small balls, and fill them with a centre of mozzarella or your favourite fillings. Coat them in breadcrumbs, then use your air fryer or Instant Pot to achieve that perfectly crispy, golden crust while keeping the inside creamy and flavourful. These bite-sized treats are crunchy on the outside and bursting with cheesy, savoury goodness inside.
Leftover risotto arancini are perfect for serving at dinner parties or enjoying as a quick snack. They’re a versatile and creative way to give new life to your risotto, turning leftovers into a crowd-pleasing dish that everyone will love. Pair them with marinara sauce for dipping, and you’ll have a true Italian treat that’s easy to make and impossible to resist!
