Ingredients
- 1 tbsp cooking oil
- 1 brown onion
- 6 chestnut mushrooms (sliced)
- 800ml vegetable stock
- 400g orzo
- 150g boursin
- 4 salmon fillets
- 100g baby spinach
- 100g frozen peas
- Salt & pepper (as needed)
- 4 lemon wedges
Instructions
- Select Sauté and add the cooking oil. When hot, add the onions and mushrooms and fry for 2 minutes.
- Press cancel to end the sauté mode. Pour in the vegetable stock and deglaze the pan.
- Add the orzo and the boursin into the centre of the pot. No need to stir.
- Lay the salmon fillets side by side in the pot, with the skin facing upwards. Pressure cook for 1 minute, then natural pressure release for 5 minutes.
- Remove the lid, and stir in the spinach, frozen peas and salt & pepper until combined. Close the lid and let it cook in the residual heat for 5 more minutes.
- Serve with a wedge of lemon.
