Ingredients

  • 4 tbsp olive oil
  • 2 shallots (diced)
  • 9 garlic cloves (roughly chopped)
  • 470ml dry white wine
  • 470ml vegetable stock
  • 460g penne
  • 570g cherry tomatoes
  • 280g baby spinach
  • 50g parmesan cheese (grated)
  • Salt & pepper (as needed)

Instructions

  1. Add the oil to the Instant Pot, select Sauté, and Adjust so it’s on the More or High setting.
  2. After 3 minutes of heating, add the shallots and sauté for 2 minutes.
  3. Add all the garlic and sauté for 3–5 minutes, until browned but not charred.
  4. Pour in the wine and scrape any dark bits from the bottom of the pot. Add the broth and pasta but do not stir.
  5. Top with the tomatoes and spinach and again, do not stir.
  6. Hit Keep Warm/Cancel. Pressure Cook on High for 6 minutes. When the time is up, carefully quick release the pressure.
  7. Stir in the Parmesan (if using), let rest for 2 minutes to slightly cool and thicken, and serve.
