Ingredients

  • 1 onion
  • 2 tsp olive oil
  • 600ml vegetable stock
  • 400g frozen peas
  • 200g spinach or romaine lettuce

Instructions

  1. To star your summer greens soup, finely dice the onion and add to the inner pot with the olive oil.
  2. Select Sauté and cook the onions until soft.
  3. Add a little bit of the stock, and deglaze the base of the inner pot with a wooden spoon.
  4. Add the rest of the stock, and the remaining ingredients and secure the lid.
  5. Select Pressure Cook for 1 minute on High, followed by a quick pressure release.
  6. Once cooked, blend the ingredients together until smooth and enjoy summer greens soup in a bowl!
