Ingredients
- 200g sweet potato
- 65g vegan butter
- 100g chocolate, broken into small pieces
- 75ml water
- 75g self raising flour
- 150g sugar
- 30g cornflour
Instructions
- Peel and chop the sweet potato into small bite sized pieces. Air Fry at 160°C for 15 minutes.
- Melt the butter over a bain-marie. Once almost melted, add in half the chocolate and the Once fully melted, take off the heat and add in the cooked sweet potato, then blend until super smooth.
- Mix the flour, sugar and cornflour together and make a hole in the Add in the blended chocolatey mixture. Mix together until well combined, then fold in the remaining chocolate.
